Ready to Fry Mix Directly In Casserole Dish Almost Ready For The Oven - It Doesn't Have To Be Pretty My Secret: Cut, Cover & Put Back In Oven Ready To Eat

Over medium high heat fry Hamburger (in chunks), Onion & Sweet Peppers (seasoned with Salt & Pepper) until burger is done & veggies have softened.

Preheat oven to 350

While meat is cooking, prepare Cornbread according to package directions (or make from scratch). Stir Red Pepper Flakes & 1 C. Shredded Cheese into Cornbread. Set aside.

In a 9x13 casserole dish mix together Tomatoes, Corn, Olives, Kidney Bean (make sure to rinse beans thoroughly), Tomato Sauce, Salt, Pepper, Garlic, Chili Powder & remaining Cup of Shredded Cheese.

Fold Hamburger Mixture into Tomato Mixture in Casserole Dish. Top with Cornbread Mixture.

Bake uncovered for 40 minutes. Remove from oven, cornbread will almost certainly not be cooked through. That's okay - here's where my trick comes in. I cut into 12 pieces, cover with foil and put back in the oven. That allows the cornbread to cook more evenly without drying out and burning.

Bake an additional 10-20 minutes until toothpick inserted into the cornbread comes out clean.

This is not an overly spicy dish so when you serve it, add hot sauce to your liking. Also serve with a little sour cream if desired.
