First thing I bet you noticed is the lack of measurements, huh? That's because this truly is a reworking of leftovers. This recipe is so simple, so forgiving and will be good no matter how many leftovers you have.
Preheat oven to 400
Slice the clean, scrubbed potatoes in 1/4" slices.
Spray baking sheet with non-stick spray and lay out potatoes in a single layer on the sheet pan. Sprinkle with salt and pepper. Bake for 15 minutes.
While potatoes are baking, in a small bowl mix together Sour Cream and Salsa to make a sauce. Again - use what you have.
Carefully remove from oven and flip potatoes over (except end pieces - just leave those)
On each potato piece layer sauce, taco meat (I usually warm it up a little because it's easier to work with) & cheese.
Return to oven and bake an additional 15 minutes.
Serve with leftover olives, onions, tomatoes, guacamole...whatever is still in the fridge from taco night.
