A Treasure Ready to do this Not sure how healthy it is, but I can eat a lot of this dough Ranger Cookies & A Hidden Mickey

Ranger Cookies

Preheat oven to 375.

In large bowl mix Oats, Coconut, Flour, Baking Powder, Baking Soda and Salt. Set Aside.

In separate bowl mix Shortening, Sugar, Brown Sugar, Beaten Eggs & Vanilla.

Mix wet ingredients into dry ingredients. If mixture seems too dry to stick together, add 2 Tablespoons of milk. If it's still dry (moisture level in Oats & Coconut play more of a factor than people realize) you can add a little more milk, but no more than 1/3 Cup total.

Drop by spoonfuls onto ungreased cookie sheets, gently press down the center of each cookie a little with the palm of your hand.

Bake until golden brown around the edges (about 10-12 mintues).
