Bacon Wrapped Stuffed Poblanos
Make sure Poblanos are stemmed, seeded (carefully) and rinsed. Set on paper towels to dry while you prep filling. Preheat oven to 375.
In a bowl mix together Cream Cheese, Garlic, Salt, Chives and Lime Juice until thoroughly incorporated. Stir in Cheeses.
Divide filling evenly among peppers and stuff, using all of it.
Wrap Bacon around stuffed peppers. Use 1 or 2 slices of bacon depending on your preference, the size of your slices and the size of your peppers. You want them to be well wrapped. Secure with toothpicks. Place wrapped peppers on a cookie sheet that's been sprayed with non-stick spray, leaving a little space between peppers.
Bake for 35-40 minutes, until bacon gets crisp.
