Preheat oven to 350
In a large bowl beat Eggs until light & fluffy. Stir in Sugar, Melted Butter & Vanilla.
In a separate bowl mix dry ingredients: Flour, Baking Soda, Baking Powder, Salt & Cinnamon.
Mix Dry Ingredients and Milk, alternatingly, into Egg Mixture.
Stir in Apple Juice. Fold in Diced Apples. Set aside.
In a small bowl, make Streusel. Mix 5 T. Flour, 3 T. Butter, 3 T. Brown Sugar & a pinch of Salt together with a fork.
Spray loaf pan with nonstick spray. Fill 2/3 of the way with batter, top with streusel. Bake 40-45 minutes until toothpick insterted in middle comes out clean.
For Muffins: Line muffin tins with paper liners or spray with non-stick spray. Fill 3/4 of the way with Muffin Batter. Top with Streusel. Bake 30-35 minutes until toothpick inserted in middle comes out clean.
