A little bit of backstory on this recipe. We have our family around quite a bit and when I cook a roast, I always plan bigger than we normally need. For some reason, using leftover Pork Roast is a challenge and I'm always looking for different ways to use it. One of the things our cross-country road trip gave us was exposure to some amazing foods we hadn't tried before. One of those was a Cuban Sandwich. I was a little hesitant at first, but I can happily say I was mistaken. Cuban's are incredible and they just happen to be a perfect use for leftover pork roast.
Prepping Ingredients is the first thing we need to do. First, take your leftover roast and heat it up a little, shred it and set aside. (It's easier to shred if it's warmed to at least room temp.) Let's talk about Pickles. Do not use hamburger dills - use either baby dills or regular dills & slice them yourself (lengthwise) or buy sandwich slices. You can opt to use French Rolls or just get a loaf of Sliced French Bread. Butter one side of each piece of bread (the outside of the rolls if using those) and smother the other side of the bread with our Special Yellow Sauce. (A traditional Cuban uses regular mustard, but I really like the yellow sauce on it better.)
Assembly (order is important so it stays together - these are messy): Bread (butter side down), Deli Ham (I leave it folded over instead of flat), Dill Pickle Slices, Swiss Cheese, a big pile of Pork and top with the 2nd slice of bread (sauce side facing pork).
You can certainly cook these on a cast iron skillet or griddle, but I do mine on a Panini Grill. If doing these on the stovetop, take your time flipping because they get messy. Also, put another skillet, pan or something heavy on top of them as they're cooking so that you have that pressure to help "glue" it all together and warm them all the way through.
Once the sandwiches are done, place them on a cookie sheet and put into a preheated oven set to the lowest temp it will go. This will keep them warm without overcooking them while you finish the others.
