Flour Tortillas
In a large bowl (or a stand mixer) combine Flour, Salt & Baking Powder. Mix briefly. Add Oil & Water and knead until dough comes together and is smooth.
Transfer dough to a floured surface. Divide into 12-16 equal portions. Roll each portion into a ball and flatten slightly with the palm of your hand. Cover with a clean kitchen towel an let rest. (At least 15 minutes, up to 1 hour.)
Roll each portion into a circle with a rolling pin (or use a press if you have one). I roll mine really, really thin but if you prefer a thicker tortilla roll them thicker, no more than 1/4" though. Cook on hot griddle or skillet about a minute on each side (until tiny bubbles form on the top and brown spots on the underside).
