Sloppy Joe Casserole

In a large skillet, brown Ground Beef.

While meat is cooking, prep your vegetables. I use what I have on hand: onions, sweet peppers, tomatoes. Use as much or as little as you want or you have, that's one of the beautiful things about this recipe - it's an easy, cheap meal you don't have to spend a lot of money on or buy a lot of special ingredients for. Slice your olives.

When burger is almost cooked, stir in vegetables so they can sautee a little bit in the beef fat. Once the burger is cooked drain any excess fat from the pan. Stir in olives & Sloppy Joe Sauce. (YES you absolutely can make your own sauce - it's not difficult - but I didn't and it turned out great with the canned stuff.)

Preheat oven to 400.

Pour meat mixture into a 13"x9" baking dish. On top of meat, carefully arrange the Frozen Tater Tots in a single layer, as close together as you can get them. Top with a generous amount of cheese (I use Colby Jack or a Cheddar & Jack Blend).

Bake uncovered for 25-30 minutes or until cheese on top is melted & sauce starts to bubble up. Enjoy!
