I know, I know, I know...this recipe is about as vague as they get. There's a reason for that. It is mind-boggling to me that some sites offer a separate recipe for every imaginable combination of sheet pan suppers and there's no reason for it. This is a SUPER EASY, economical, versatile recipe that I don't think you can screw up. (Some of you laughed, but I mean it - it's that easy.) This is a recipe that you can use what you have and make it amazing. I do this fairly often with different variations (including fajitas) and I love it.
First, slice and marinate your meat. It doesn't have to be in bite size pieces, but I'm not a fan of leaving the meat in big pieces. I don't think it cooks well. In the pictures above I used boneless, skinless chicken thighs and cut in 2 or 3 pieces then I marinated most of the day in Teriyaki, Garlic & Honey. You'll want to marinate for at least 30 minutes, but longer if you can. (Longer is always better with marinade.)
Preheat the oven to 375.
Prep your vegetables and layer on your sheet pan. You'll want your heartier veggies (squash, potatoes, carrots, onion, etc) towards the bottom so they cook better. In the pictures above, I layered Onions, Zucchini, Mushrooms, Fresh Green Beans & Sweet Peppers. (No need to spray your pan first)
Once the veggies are on the pan, toss with Olive Oil and sprinkle with Seasonings. I used Fresh Chives, Garlic, Coarse Ground Salt & Pepper, Lemon Pepper and a little more Teriyaki & Honey.
Bake uncovered for 35 minutes (a little more or less depending on the meat).
My intention with this recipe isn't to give you something so vague that you can't do it. Quite the opposite. It's my hope that this is one of those tricks you'll stick in the back of your mind and use often. It's my go-to when I am out of ideas or life has been especially crazy. Sometime I forget that just because I know how to do something, doesn't mean everyone has done it. And sometimes those simple recipes are the best. This is one of those. It's an amazingly simple thing, it's delicious, it's economical, it's versatile, it's healthy and your family will love it. Promise. Even your picky eaters will like the veggies this way.
