In Saucepan combine Water, Butter, Salt & 1/2 tsp of the Cinnamon. Bring to boil, stirring occasionally. Reduce heat to low and stir in flour. Stir until mixture comes together in a ball.
Remove from heat and let sit for about 7 minutes. While dough is resting, mix Sugar and remaining 1 tsp of cinnamon together. Set aside.
Add eggs to dough one at a time, mixing well.
Heat your oil for frying to around 350 degrees.
Spoon dough into piping bag with large star tip, a cookie press or you can shape by rolling in your palms into lines. Drop into hot oil and fry until they float and are golden brown.
Remove from oil and drain on paper towels. Immediately toss with Cinnamon Sugar Mixture and serve warm.
Side Note: On the Mickey Mouse shaped ones, I piped those onto wax paper on cookies sheets and put in the freezer for a couple of hours before frying. They cook up just as quick and as good as fresh, but they're much easier to handle when they're a little more solid. Another advantage to doing that is right before you put them in the oil, you can press the ears onto the head a little - I learned quickly that ears like to become detached when frying. Whoops! Don't worry - even if they come out ugly, they WILL get devoured! You could make any shape you wanted in these for any holiday.
