Pour Water into bowl of stand mixer and add yeast. Stir until dissolved then stir in sugar until mixed. Let sit for 5 minutes.
Stir in Salt, Garlic & Olive Oil. Gradually add Flour and mix on 1 or 2 in stand mixer with dough hook until well mixed and dough pulls together into a ball. This takes about 5 minutes. (You can't over knead this dough.)
Rub a thin layer of olive oil over outside of dough, put back in bowl, cover with plastic and let rise in a warm area until double in size (30-45 minutes).
Divide dough in half and form each half into a long loaf. Place both loaves on a large cookie sheet. Let rise on pans for about 15 minutes.
While loaves are rising, preheat oven to 400
Gently score diagonal strips into each loaf at an angle. Brush outside of loaves liberally with melted butter. Sprinkle with Garlic & Grated Parmesan.
Bake about 25 minutes.
