In a pot of heavily salted water, boil potatoes until they are fork-tender. Drain well.
Preheat oven to 375.
Pour enough Olive Oil on a cookie sheet to get an even coat on the pan. Add to oil Garlic, Salt, Pepper, Chives & Dill. As much or as little as you like. If there are other spices you normally use on potatoes, use those too.
Carefully pour potatoes from strainer onto cookie sheet. Shake to coat potatoes with seasoned oil. You'll want them coated well so if it looks like they need more spices, add them at this point.
Taking a glass or jar, smash the potatoes onto the cookie sheet. Smash them about to about 1/4 of the height they were before. Do this with all potatoes, spreading them out on baking sheet. It's okay for them to touch if they have to.
Once your potatoes are all smashed, sprinkle top of each mound with Bacon Crumbles and Shredded Cheese.
Bake about 15 minutes, until edges start to crisp. (Can serve with a dollop of Sour Cream if you like)
