Jalapeno Popper Chicken

  • 8oz Bacon (6-7 Slices)
  • 2.5 lbs Chicken Breast
  • 3/4 C. Diced Jalapenos
  • 5oz Cream Cheese, cut into chunks
  • 1 1/2 C. Shredded Cheddar Cheese

Cook the Bacon in a skillet over medium heat until crispy. Remove bacon onto a plate or paper towel.

Cut the Chicken Breast into bite size pieces. In the same skillet you cooked bacon in, cook Chicken in Bacon Grease over medium heat for about 10 minutes.

Add Diced Jalapenos and continue cooking until chicken is full cooked. (It's up to you about removing the Jalapeno Seeds. The more seeds, the hotter the meal.)

Once chicken is done lower the heat and add Cream Cheese. Stir until it melts. Add in Bacon & Shredded Cheese. Cover with lid until the cheese is melted.

I like to serve it over Rice, but this is also good on baked potatoes, pasta or by itself.
