Drain Chicken, rough chop it and put into a bowl. (It's easier to make into patties if the chunks are a fairly uniform size.)
Add Eggs, Mustard, Mayo and Spices. Stir will with a fork until well combined. Stir in bread crumbs. (I normally put 1/2 of them in and stir and add the additional if mixture looks too wet. Sometimes it only takes 1/4 C. but you want this to be a really dry mixture so use your best judgement on it.)
Heat Oil 1/4" Oil in skillet over Medium High until about 350'.
Form mixture into balls and flatten. I make them large enough to make chicken sandwiches out of, but if you wanted to do smaller for chicken nuggets you could definitely do that. Coat in additional bread crumbs and fry in hot oil until golden brown and crispy. Removed to paper towels and drain excess grease before serving.
