These are the famous "Helen Taylor Sugar Cookies" that many have tried to duplicate, but few have been successful at it. I've tried to re-write my Grandma's recipe so it's more user-friendly, but so much of the magic in these cookies is in the method not the recipe. It's taken me years to get this close to replicating her cookies. How long this recipe has been in my family is a bit of a mystery, but I've been able to trace it back to the early 1800's on the Pennsylvania Dutch side of my ancestry. These are not those store-bought, hard as a rock, thin sugar cookies. These are light, fluffy, melt in your mouth, airy deliciousness with a hint of lemon. Try one and you'll never look at other sugar cookies the same again.
